Creamy Mushroom Soup

A lovely mild taste and wonderful creamy texture.

Ingredients

Brown mushrooms 200g
Onion (large) 1
Potato (large) 1
Butter 15g
Water 500ml
Chicken stock cube 1
Milk 500ml
Salt as required
Pepper as required
Parsley as required

Method

Fry the thinly sliced onion in butter until soft.

Add the water, stock cube, sliced mushrooms and sliced potato, cook until soft. This is the Knorr stock cube I used.

Take off the heat and mix with a hand blender to make it smooth.

Put it back on low heat and add the milk.

Season with salt & pepper and serve in a bowl. Sprinkle with the finely chopped parsley. This frozen parsley is very convenient.
