Smoked Salmon & Spring Onion Grilled Spring Rolls

Goes really well with beer or wine!

Ingredients

Spring roll wrappers 2
Smoked salmon trimmings 100g
Spring onions 30g
Dill as required
Vegetable oil 1 tbsp
【A】 
Flour 1 tbsp
Water 1 tbsp
【BSauce】
Mayonnaise 2 tbsp
Lemon juice 1 tbsp
Chopped capers 1 tbsp

Method

Cut the wrappers into half to create 4 triangles.

Chop the spring onions diagonally. Remove the stalk from the dill.

Place a quarter each of smoked salmon, spring onions and dill across the bottom of each triangle wrapper, in this order.

Fold and overlap in the centre the left and right corners. Roll upwards to create a spring roll and use the ingredients for A to make a glue to hold in place.

Repeat with all 4 triangle wrappers.

Put the oil in a frying pan and pan fry the spring rolls on both sides on a medium heat.

Serve with the sauce at B (mix all these ingredients together).
