Ingredients

Peppers (red and yellow) 1 each
Vegetable oil 1 tbsp
Dashi broth 400ml
Sugar 1 tbsp
Mirin 2 tbsp
Soy sauce 1 tbsp
Bonito flakes as required

Method

Pierce the whole peppers randomly - this will aid absorption and stop them from bursting.

Put the oil in a pan on medium heat and add the peppers. Fry for 5 minutes until the surface chars a little.

Add the dashi broth and seasonings and bring to the boil. Simmer for 30 minutes on low heat, turning occasionally.

Turn the heat off. Just before serving, heat again in a pan.

Transfer to a serving dish and sprinkle with bonito flakes.
