Cabbage Donburi (Rice Bowl)

Ingredients

Green cabbage 1/4
Sesame oil 1 tsp
Ginger juice 1 tsp
Soy sauce 1 tbsp
Mayonnaise 1 tbsp
Organic egg 1
White vinegar 1 tbsp
Cayenne pepper a little

Method

Finely slice the cabbage into strips. Crack the egg into a small bowl.

Boil some water in a pan and add the vinegar. Swirl the water and drop in the egg carefully to make a poached egg.

Boil the egg for 3 minutes, removing the scum. When the egg white is solid, scoop out the egg and put onto kitchen paper to dry.

Put the oil in a frying pan and fry the cabbage on medium heat. Add the ginger juice, soy sauce and mayonnaise.

Put some just cooked rice into a bowl and add Step 4, followed by Step 3. You can add some cayenne pepper on top if you like.

Tips & Note

●At Step 2, don't let the water boil once you add the vinegar, otherwise the water will be too rough for the egg.
●The egg yolk should remain a bit runny at Step 3, so you can put the egg into cold water to stop it cooking further if necessary.
