Chinese Leaf & Minced Pork Salad

You get a wonderful final finish by pouring on a hot sizzling oil dressing!

Serves 4

Ingredients

Chinese leaves bunch 1/2
Spring onions 2
Coriander leaves as required
Dried shrimps 1/2 cup
Minced pork 100g
Garlic 1 clove
Ginger 1 thumb
Vegetable oil 1 tbsp
Soy sauce 1-2 tbsp
Oyster sauce 1-2 tbsp
Sugar 1/2-1 tbsp
Lemon juice 1/2
Sesame oil 3-4 tbsp
Salt as required
Tomato (optional) 1

Method

Cut the Chinese leaves into fine strips. Slice the spring onions diagonally. Rehydrate the shrimps in warm water.

Put the oil in a frying pan and fry the minced pork on high heat until browned.

Finely chop the shrimps and add to Step 2 and fry. Add the finely chopped garlic and ginger and fry until you can smell the garlic.

Add the soy sauce, oyster sauce and sugar and mix well. Allow to reduce completely.

Put the Chinese leaves, coriander and spring onions in a bowl and mix. Transfer to a serving dish.

Top with the mince from Step 4 and squeeze with lemon juice and sprinkle with salt.

Heat up the sesame oil in a small pan on a very high heat until it starts to smoke. Pour over Step 6 and serve with sliced tomatoes if you like.
