Savoury Tuna & Egg on Rice

So simple, quick and satisfying for when the kids say they're a bit hungry.

Ingredients

Tinned tuna 1
Spring onions 2
Eggs 2
Cooked rice for 2 people
Soy sauce 2 tbsp
Sesame oil 1 tbsp
Sugar 1 tsp
Butter as required
Salt & pepper as required

Method

Drain the oil from the tuna and put into a bowl with finely chopped spring onions, soy sauce, sesame oil and sugar and mix well.

Make a half cooked fried egg in a frying pan with the butter, then sprinkle with salt & pepper.

Put the cooked rice in a bowl and top with Steps 1 and 2 before serving.

Mix the tuna with the half cooked egg as you eat - enjoy!

Tips & Note

●You can use coriander instead of spring onions and fish sauce (nam pla) instead of the soy sauce to make it more Thai style
