Rice Bun Hamburger Sukiyaki-Style

I've just adapted the popular Japanese dish.

Ingredients

Minced beef 200g
Onion 1
Egg 1
Salt & pepper as required
Grilled tofu (yaki-dofu) 1 pack
Leek 1
Fried Eggs 4
Mayonnaise as required
Lettuce & sliced onions if you like
Sauce:
Soy sauce 3 tbsp
Dashi stock 150ml
Mirin as required
Sugar as required
Potato starch as required
Rice buns:
Cooked rice 4 rice balls
Potato starch 4 tsp
Sugar 4 tsp
Soy sauce 4 tsp

Method

Finely chop the onions and slice the grilled tofu into 5mm strips. Cut the leeks diagonally.

Put some oil in a frying pan and heat. Fry the leeks and tofu until they are lightly browned.

First, make your burger. Put the minced beef and finely chopped onion into a bowl and mix well.

Season with salt & pepper. Add the beaten egg a bit at a time and mix well. Divide into 4.

Put some oil in a frying pan and brown off the 4 burgers.

Turn down the heat to low and keep frying the burgers until fully cooked.

Now make the sauce. Put all the sauce ingredients except the potato starch into a pan and boil. Make up the potato starch with a bit of water and add to the pan to make a sticky sauce.

Making the rice buns: put all the rice bun ingredients in a bowl and mix together.

Split a rice ball into half and put between two sheets of cling film.

Press down with a flat plate to make the rice 8mm thick.

Remove the plate and cling film and neaten into a round shape.

Repeat 8 times. Fry with a little oil until lightly browned on one side.

Make 4 fried eggs.

Place one rice bun on a plate and top with the fried tofu and leek, then the burger. Pour the sauce from Step 7 over the top.

Put a fried egg on top and cover with another rice bun - both buns should be brown side outside.

You can add mayonnaise, sliced onions and lettuce if you like. It's ready to serve.

Tips & Note

●Put a touch of vegetable oil on the palm of your hand when you handle the rice ball to avoid it sticking.
