Round Sushi Topped with Sweet Marinated Herrings

Ingredients

Sweet marinated herrings 1 pack
Cooked rice 2 gou (300g)
Crushed sesame seeds as required
Cress leaves as required
Sushi vinegar:
Rice vinegar 3 tbsp
Light brown sugar 2 tbsp
Salt 1.5 tsp

Method

Put the just cooked rice in a bowl and pour in warmed sushi vinegar (microwave for 1 minute) and the crushed sesame seeds. Mix well.

Make rice balls and top with some cress. Garnish with the herring over the top.

This is the sweet marinated herring I used.

Tips & Note

●Make this at the same time as a smoked salmon version for a colourful party dish
●Rollmops have a slightly strong vinegar taste, so sweet marinated herrings suit this recipe better
