Spicy Taco Filling On Rice

Ingredients

Cooked rice for 2 people
Minced beef & pork 200g
Lettuce leaves 2
Tomato (medium) 2
Onion (medium) 1
Garlic 1 clove
Vegetable oil as required
Fried egg (optional) 1
Cheese (optional) as you like
Lemon (optional) as you like
Chilli Sauce:
Tinned tomatoes (chopped) 100g
Salt 1-2 tsp
Chilli paste 2 tsp
Pepper as required
Tomato ketchup 1-2 tsp
Lemon juice as required
Seasonings
Curry powder 1 tsp
Tabasco as you like

Method

Chop the vegetables: lettuce into bitesize, tomatoes diced, onion and garlic finely chopped.

Put the oil in a frying pan and fry the onion and garlic on medium.

When the onion is browned, add the mince and fry until separated.

When the mince has browned, add the chilli sauce and seasonings. Mix and fry.

When the sauce is reduced, the chilli filling is ready.

Place this filling on cooked rice and serve alongside the lettuce and tomatoes. You can garnish with cheese, lemon and fried egg on top if you like.

Tips & Note

If you like it very hot, add more chilli paste. You can add avocado as another option.
