Avocado Dip Served in a Fried Tortilla

Ingredients

Soft tortilla (regular size) 2
Vegetable oil for frying as required
Salt as required
Pepper as required
Mayonnaise as required
Cheddar cheese (grated) 40g
Dip Ingredients
Avocado 1
Cherry tomatoes 4
Chilli (finely chopped) as required
Coriander (finely chopped) 1-2 tbsp

Method

Here are the ingredients.

Dice the avocado and roughly mash with the back of a fork. Add all the other dip ingredients and mix.

Fry the tortilla in 180C oil.

Remove from the oil and sprinkle with 20g cheese. Microwave for 20 seconds to melt the cheese.

Pile up Step 2 onto Step 4 and sprinkle salt & pepper and drizzle with mayonnaise.

Tips & Note

●Take care not to burn the tortilla when frying at Step 3, so keep turning it over.
