Serves 4

Ingredients

Japanese pickled cucumber 1/3
Cleaned squid 1
Okra 4
Pickled plums (umeboshi) as required
Cooked rice enough for 4
Dashi soy sauce as required
Soft boiled quail eggs or boiled hen's eggs 2
Green laver as required

Method

1
Put some salt into boiling water and cook the okra for 4 minutes before plunging into iced water.
2
In the same hot water, cook the squid for 2 minutes.
3
Cool the squid down immediately in iced water and pat dry.
4
Chop the Japanese pickled cucumber, okra and squid.
5
Cut the pickles plums into 4. Put the cooked rice into a bowl and place the cucumber mix evenly onto the rice.
6
Put the pickled on the side, add the boiled eggs and green laver, and serve with dashi soy sauce.

Tips & Note

If you can't get dashi soy sauce, you can use ordinary soy sauce. But it's actually very easy to make your own dashi soy sauce if you have dashi powder. Add 2 packs into 200ml ordinary soy sauce, mix and leave it for half a day. Keep in a cool place.
