Stir Fried Lettuce and Egg

Ingredients

Lettuce 1/2
Eggs 2-3
Sesame oil 1 tbsp
Salt and pepper as required
Chicken stock 3 tbsp
Chilli oil optional

Method

After washing the lettuce well, pull it apart into large pieces by hand and drain it well.

Add 1 tbsp sesame oil to a frying pan, heat on high heat, add the lettuce and fry for about 2 minutes once seasoned with salt & pepper..

Add about 1/2 teaspoon of chicken stock dissolved in 3 tbsp of hot water and heat for about 1 minute.

Add a pinch of salt into the beaten eggs, then pour into the frying pan. Mix well. When the egg is half-cooked, it's done.

Pour on some chilli oil if you like it hot.
