Creamy Avocado & Egg Stir Fry

Ingredients

Avocado 1
Eggs 3-4
Wasabi (in a tube) 2 cm
Light soy sauce 1 tbsp
Vegetable oil as required

Method

Beat the egg and cut the avocado into dice.

Mix the wasabi and soy sauce together in a small bowl.

Put the oil in a large frying pan on medium heat. Pour in the egg and the avocado when the base of the egg has set.

Start mixing by scrambling until the egg is half cooked through.

Transfer to a serving dish and pour over the sauce from Step 2.

Serve on top of rice or as a side dish.

Tips & Note

※Ripe avocados work better than the hard green ones
※Don't cook the eggs through, it's better if they're a bit soft
※You can omit the wasabi if you're making this for kids.
