Ramen Noodle Salad

Make a delicious dressing and add toppings of your choice!

Ingredients

Ramen noodles for 1
Toppings (lettuce, tomato, ham, prawns... a bit of each
...avocado, surimi, sweetcorn) a bit of each
Hard boiled egg 1/4
Dressing:
Soy sauce 1 tbsp
Vinegar 1 tbsp
Sugar 1 tbsp
Sesame oil 1 tbsp
Crushed sesame seeds 1 tbsp
Sesame seeds 2 tbsp
Mayonnaise 1 tbsp
Chinese chilli bean sauce 1 tsp
Miso (red) 1 tsp

Method

Make the dressing: mix all the ingredients in a bowl and dissolve the sugar and miso.

Use whichever toppings you like, but make sure they look nice and colourful. Chop into small bitesize pieces.

Boil the ramen noodles and wash under cold running water. Drain well and transfer to a serving bowl. Add the toppings, pour over the dressing from Step 1 and serve!

Tips & Note

Use your favourite toppings but take care to use a good mix of colours. If you prefer a more grown up taste, add more chilli bean sauce or Gochujang.
