Shallow Fried Aubergine & Parma Ham Sandwich

Simply microwave the aubergine to soften, then sandwich with parma ham and cheese - such a satisfying snack!

Ingredients

Aubergine 1
Salt & pepper a little
Parma ham slices 2
Cheese (Red Leicester) as required
Flour as required
Egg 1
Breadcrumbs as required
Olive oil 3 tbsp
Parmigiano reggiano 3 tsp
Tomato sauce (shop bought) as required

Method

Peel the aubergine in strips. Double wrap with cling film and microwave for 3-4 minutes. Remove the cling film and use a knife and fork to open it flat.

Season lightly with salt & pepper. Lay the parma ham on top, then your favourite cheese over half the ham.

Add the grated Parmigiano reggiano to the breadcrumbs. Fold over the aubergine to close it, then dredge with the flour, run through the beaten egg and coat with the breadcrumbs.

Put the olive oil in a frying pan on medium heat and add the aubergine. Shallow fry until golden brown on both sides. When the cheese melts, it's ready. Transfer to kitchen paper to drain excess oil.

Transfer to a serving dish and enjoy with your favourite tomato sauce. I love it with peri peri sauce or any spicy hot one.

Tips & Note

I recommend a medium size aubergine. I used Red Leicester cheese, it;s a bit salty and works really well with aubergine.
