Kale and Quinoa Salad

It's packed full of superfoods!

Ingredients

Quinoa and bulgar wheat 50g
Water 70ml
Kale 100g
Tuna (tinned, in sunflower oil) 1 (80g)
Cherry tomatoes 6
Red onion 30g
Dried apricots 60g
Balsamic vinegar 2 tbsp

Method

Put the quinoa and bulgar wheat in a small pan and add the water. Bring to the boil then turn down and simmer for 10 minutes with the lid on.

Add the tuna and its oil into the bowl.

Boil the kale for 1 minute in salted water, transfer to a colander and cool under running water. Drain and pat dry and transfer to a bowl.

Season with salt and mix well again.

Transfer to a serving dish and garnish with the remaining apricots around the top.

I used this Waitrose LOVE Life: Bulgar Wheat with Quinoa.

Add Step 1, chopped tomatoes & finely chopped red onions, half of the dried apricots and balsamic vinegar to the bowl and mix.

Tips & Note

●Quinoa is from South America, it contains lots of protein, iron, Vitamin B and minerals...it's well known as a superfood. Bulgar wheat is the whole wheat kernal, it's steamed then dried then cracked - it also has lots of fibre and minerals.
