Creamy Vermicelli (Maloney) Salad

I made a Refreshing Vermicelli (Maloney) Salad, this one is more creamy using yogurt and mayonnaise.

Ingredients

Vermicelli or maloney 50g
Eggs 2
Surimi (crab sticks) 4
Onion 1/4
Tenderstem broccoli 2
Fat free yogurt 1 heaped tbsp
Mayonnaise 1 tbsp
Vinegar 1 tbsp
Mustard 1 tsp
Salt & pepper as you like

Method

Boil the vermicelli in hot water for 3 minutes. Wash under running water and drain in a colander. Cut before or after boiling.

Boil the eggs - put a small amount of water in a pan, put the lid on and steam boil for 8 minutes to get the perfect result. Peel the shells and chop into small pieces.

Chop the surimi, onion and broccoli into small pieces. You could add ham, carrot, cucumber or sweetcorn if you like.

Mix the seasonings from the yogurt to the mustard together in a bowl and add the vermicelli and salad ingredients and mix well.

Transfer to a serving dish and sprinkle with salt & pepper if you like.

Tips & Note

I used fat free yogurt because there is egg in this dish and I didn't want it to be too heavy.
