Lemon Marinated Celery

A lovely fresh side dish, the sour lemon flavour will certainly wake you up!

Ingredients

Celery 3
Lemon juice 1
Salt & pepper as required
Garnish as required

Method

Remove the fibres from the celery and cut into 2-3cm pieces.

Put the celery, salt & pepper (freshly ground is best) and lemon juice in a bowl and keep in the fridge for 30 minutes to marinate well.

Transfer to a serving bowl and garnish as you like.

I used this, it's actually the threads from a dried chilli. It's not at all hot, so the kids can also enjoy this. You can buy it at Korean supermarkets.

Tips & Note

You can eat it as soon as you add the lemon juice at Step 2 but it tastes much better after it's marinated a while. But, if you keep it too long, the moisture will be drawn out from the celery and will make it too light and watery. You can rescue this by adding salt & pepper again.
