Egg Miso Sauce

An ideal side dish to go with hot cooked rice or rice balls or risotto.

Ingredients

Miso paste 4 tbsp
Sugar 2 tbsp
Sake 1 tbsp
Mirin 1 tbsp
Beaten egg 2
Crushed garlic a little

Method

Mix the miso, sugar, sake and mirin in a bowl.

Pour into a pan and heat on low, stirring gently with a spatula.

Add the beaten eggs and keep stirring for 5 minutes on a very low heat.

Add the crushed garlic at the end, it's now ready.

Tips & Note

Here, I used red miso paste, but any is fine.
At Step 3, reach your desired consistency.
It will keep until the next day in the fridge.
Cayenne pepper is as nice as garlic, if you prefer.
