Turnip Miso Soup

The turnip gives an interesting texture to this warming miso soup.

Ingredients

Turnip 1
Hot water 600ml
Dashi stock granules 2-2.5g
Miso (red or mixed) 35-40g
Spinach 2 handfuls
Spring onion 1

Method

The turnip has a potato texture once it's cooked.

Peel the turnip and cut into 8 wedges. Boil the hot water and add the dashi stock and turnips. Cook on high heat for 5-6 minutes.

Turn the heat down to medium. Add the dashi but mix it well dissolved in water beforehand to avoid lumps. Add the spinach and cook for 1 minute on medium heat.

Transfer to a serving bowl and sprinkle with the finely chopped spring onions.

Tips & Note

●Vegans should use a vegetable stock cube (maybe 1/4) instead of dashi stock granules
●You can use as a standard about 20g per 200ml water for a good size miso soup per person, so adjust with extra water if any vegetables require boiling
