Chicken & Sweetcorn Miso Soup

A sweet and delicious miso soup - use the tinned sweetcorn juice too.

Ingredients

Chicken breast fillet (medium) 1
Salt & pepper as required
Tinned sweetcorn 1
Miso (red or mixed) 40g
Dashi stock granules 2.5g
Hot water 500ml
Spring onion 1/2

Method

Season the chicken with the salt & pepper and cook in the microwave for 2 minutes. Chop into icm pieces. In this photo, the miso amount is 40g and the dashi stock is 2.5g.

Put the hot water in a pan on high heat and add the diced potatoes and chicken. After one minute, add the sweetcorn with itsjuice and boil for another minute on medium heat.

Add the miso through a tea strainer and allow to dissolve completely. Pour in the beaten egg and stir gently, the soup is now ready.

Transfer to a bowl and sprinkle with the finely chopped spring onions.

Tips & Note

If you feel a deep soup stock flavour is missing, try adding a half chicken stock cube.
