Potato Salad with Soy Beans (Edamame)

Cucumber is typical but try this using edamame instead - it's full of protein!

Ingredients

Potatoes 700g
Frozen edamame (soy beans) 50g
Carrot (medium) 1
Ham slices 5
Boiled eggs 2
Salt & pepper as required
Apple vinegar 1.5 tbsp
Mayonnaise 8 tbsp

Method

Boil the peeled and chopped potatoes in salted water until cooked through, then drain and add the salt & pepper and apple vinegar.

Defrost the edamame in a microwave. Cut the carrot into quarter lengthways then into fine slices and microwave until soft.

Slice the ham into 5-7mm strips and finely chop the boiled eggs.

When the potatoes have cooled, add the edamame, carrot, ham, eggs and mayonnaise and season with salt & pepper.

Keep in the fridge but serve at room temperature.

Tips & Note

●I didn't include any onions this time as I wanted a child-friendly version but for adults, I recommend to add this
●I used Tesco's frozen Soya Beans
