Foil Wrapped Salmon Parcels with Vegetables

This has a lovely deep flavour because of the butter and miso paste.

Ingredients

Salmon fillets 2
Leek (small) 1
Chestnut mushrooms (medium) 4
Potatoes (medium) 3-4
Lemon slices 4
Salt & pepper a little
Butter 1 tsp
Miso paste 1 tsp
Soy sauce 1 tsp
Sake (or white wine) 1 tsp
Asparagus 6

Method

Cut the potatoes into fine strips and boil for 8-10 minutes - this will be the bed for the salmon.

Season the salmon with salt & pepper and keep aside for 10 minutes. Pat dry.

Cut the salmon fillets into 4 pieces each. Slice the mushrooms and leeks diagonally.

Take a large piece of foil and put the boiled potato strips in the centre. Put the miso paste, 4 pieces of salmon, leeks and mushrooms (in this order) on top.

Place 2 slices of lemon and 3 asparagus on top with the butter. Season lightly with salt & pepper and drizzle with the sake and soy sauce.

Fold in the top and bottom pieces of foil and scrunch firmly to seal. Twist the left and right sides of foil to seal tightly.

Put into a preheated oven 200C for 20 minutes.

Check the salmon is cooked through before putting on a serving dish with the foil. Open up the foil when ready to serve.

Tips & Note

You won't be able to adjust any taste once it's in the oven, so don't over-season before you wrap up in the foil. You can always adjust at the end before serving.
