Serves 2 Prep: 10 min Cook: 15 min

Ingredients

Mushrooms (shimeji, oyster or ordinary) 100g
Cooked rice 150g
Sauce:
Soy sauce 1/2 tsp
Crushed sesame 1 tsp
Green laver 1 tsp
Potato starch in a bit of water 1 tsp
Sesame oil 1 tbsp
Dashi stock 300ml
Seasonings:
Sake 1 tbsp
Mirin 1 tbsp
Soy sauce 1 tsp
Ginger juice 1/2 tsp
Potato starch in a bit of water 2 tsp
Your favourite toppings (half-boiled eggs or nori) as you like

Method

1
Mix all the ingredients for the sauce with the cooked rice.
2
Put the sesame oil in a frying pan and add the ingredients from Step 1. Pat down flat with a spatula and cook until dark brown and a solid pancake. Turn over and repeat.
3
It's maybe easier to tip it onto a flat plate and turn over back into the frying pan.
4
Boil the dashi in a saucepan and add all the seasoning ingredients.
5
Add the bitesize chopped mushrooms into the pan and cook. Add the potato starch in water and stir until it thickens and becomes sticky.
6
Cut the rice pancake into bitesize pieces and pour the sauce over it.
7
Put your favourite toppings such as half-boiled eggs, nori or cress.

Tips & Note

Cook the rice pancake until it's quite dark and solid, it will make it easier to turn in the pan.

Aubergine (eggplant) and miso are a match made in heaven. Cooking thick sliced of aubergine is a bit of hassle, but with a microwave, it's done in 3 minutes. All that's left is to stir fly it with the miso sauce. Translated by Chat GPT
