Fried Mushrooms in a Sticky Sauce

This goes well with half-boiled eggs.

Ingredients

Mushrooms (shimeji, oyster or ordinary) 100g
Cooked rice 150g
Sauce:
Soy sauce 1/2 tsp
Crushed sesame 1 tsp
Green laver 1 tsp
Potato starch in a bit of water 1 tsp
Sesame oil 1 tbsp
Dashi stock 300ml
Seasonings:
Sake 1 tbsp
Mirin 1 tbsp
Soy sauce 1 tsp
Ginger juice 1/2 tsp
Potato starch in a bit of water 2 tsp
Your favourite toppings (half-boiled eggs or nori) as you like

Method

Mix all the ingredients for the sauce with the cooked rice.

Put the sesame oil in a frying pan and add the ingredients from Step 1. Pat down flat with a spatula and cook until dark brown and a solid pancake. Turn over and repeat.

It's maybe easier to tip it onto a flat plate and turn over back into the frying pan.

Boil the dashi in a saucepan and add all the seasoning ingredients.

Add the bitesize chopped mushrooms into the pan and cook. Add the potato starch in water and stir until it thickens and becomes sticky.

Cut the rice pancake into bitesize pieces and pour the sauce over it.

Put your favourite toppings such as half-boiled eggs, nori or cress.

Tips & Note

Cook the rice pancake until it's quite dark and solid, it will make it easier to turn in the pan.
