Bang Bang Style Chicken Salad

Tastes nice and nutty with a simple sauce made from Tahini.

Ingredients

Chicken breast fillet 1
Celery 2
Red pepper 1/4
Tahini 2 tbsp
Noodle broth (mentsuyu) 2 tbsp
Miso (red) 1 tbsp
Soy sauce 1 tbsp
Mirin 1 tbsp
Vinegar 1 tbsp
Chinese chilli bean sauce 1 tsp
Sesame seeds as required

Method

Slice the chicken breast twice but not all the way through, so you can open it out thinly. Season with salt & pepper and keep aside for 10 minutes.

Put the chicken in a bowl and cover with cling film. Microwave for 3 minutes then turn the chicken over and microwave for another 3 minutes.

In the meantime, make the sauce: put all the ingredients from Tahini to chilli bean sauce into a bowl and combine.

Allow the chicken to cool once cooked through. There will be some liquid in the bowl - add this to the bowl at Step 3.

Shred the chicken into strips and add to the sauce at Step 3 and mix well.

Cut the celery and red peppers into fine strips and season lightly with salt and keep aside for 5 minutes.

Remove the chicken from the bowl at Step 5 onto a serving dish and cover with the celery and red pepper slices. Pour over the sauce left in the bowl and sprinkle with sesame seeds.
