Dried Squid & Celery Salad

I was taught this recipe by a chef from an exclusive Japanese restaurant. Dried squid is delicious, just mix with celery to get an interesting salad.

Ingredients

Celery 3
Dried squid 20g
Noodle stock (mentsuyu) 1 tbsp

Method

Finely slice the celery (3 celery stalks, about 80g, is 14 kcal).

Chop the dried squid to 1cm pieces (20g is 40 kcal).

Mix the noodle stock (14 kcal) with the celery and squid and put into a ziploc bag. Seal and keep in the fridge for 30-40 minutes.

When the celery has softened, it's ready to serve. The total weight is 100g, total kcal is 70.

Tips & Note

This is ideal for those on a diet. It has great texture. If you prefer it more sour, use lemon or lime juice instead of noodle stock.
