Healthy Miso Soup with Tofu and Coriander

Quite unusual to add coriander to miso soup but it works really well.

Ingredients

Hot water 500ml
Dashi stock granules 2.5g (1/3 tbsp)
Onion 1/2
Miso red or mixed 40g
Coriander 15-20g
Tofu (silky or firm) 1/4

Method

Cut the tofu into 5mm dice. Use the coriander stalks - cut into 3, and finely slice the onion.

Put the onions into the boiling water for 3 minutes. Add the dashi stock and turn the heat down to medium. Add the miso through a strainer or dissolved in water to prevent lumps. Add the tofu.

Add the coriander stalks for 1 minute. Turn the heat off and add the coriander leaves.

The saltiness of the miso soup will depend on you but as the 500ml water will reduce to about 400ml soup, you can adjust to your taste.

Tips & Note

If you love coriander, add more up to about 30g.
Vegans should use 1/4 vegetable stock cube instead of dashi.
