Healthy Miso Soup with Kale & Tofu

Kale is a real superfood - it can be a bit fibrous but it tastes good and is great for you!

Ingredients

Kale 2 handfuls
Tofu 1/4
Water 500ml
Miso (red) 40g (3 level tbsp)
Spring onion 1/2
Dashi stock granules 2.5g

Method

Boil the kale for 3 minutes to soften. You normally need 400ml water per person for the soup, but I added an extra 100ml water to make 500ml total because some of it will boil off.

Add about 2.5g dashi stock granules. Turn the heat down to medium, it should not boil any more.

Add the 1cm diced tofu and warm through.

Add the miso through a strainer or dissolved in a ladle to prevent any lumps.

I used this amount of miso, 3 level tbsp, for 2 people. You could add more if you like it saltier, or reduce as you like.

Transfer the soup into a bowl and sprinkle with finely chopped spring onion.

Tips & Note

The miso amount depends on the manufacturer and also your own taste, so 40g for 2 people is a basic guideline. Use soft water if you can.
Vegans should use a vegetable stock cube instead of dashi.
