Soba Salad with Wasabi Dressing

Very healthy and good for dieting!

Ingredients

Soba noodles 100g
Avocado 1
Cherry tomatoes 5-6
Salad leaves as required
Sesame seeds as required
Wasabi dressing:
Soy sauce 1.5 tbsp
Vinegar 1.5 tbsp
Sesame oil 1 tbsp
Olive oil 1 tbsp
Honey or golden syrup 1 tsp
Wasabi paste 1 tsp

Method

Mix all the wasabi dressing ingredients together in a bowl.

Boil the soba noodles as per the packet instructions then wash under cold running water and drain well.

Transfer the noodles onto a serving dish and arrange the chopped avocado, cherry tomatoes and salad leaves attractively on top. Pour over the dressing and serve!

Tips & Note

You can add chilli powder to the dressing to give a bit of heat if you like.
Tinned tuna would also work wonderfully in this salad.
