Chinese Leaf and Tuna Salad with a Honey Mustard Dressing

This dressing makes the Chinese leaves really sweet. As a vegetable side dish, it's loved by kids through to grandparents.

Ingredients

Chinese leaves bunch 1/4
Tinned tuna 1/2-1
Vinegar 1/2-1 tbsp
Honey 1 tsp
Wholegrain mustard 1 tbsp
Salt a little
Pepper a little

Method

Here are the ingredients.

Wash the Chinese leaves, remove the central leaves and cut the remainder into 5mm pieces.

Put the central leaves in a pan and cook on medium heat until water is released. Keep stirring, then add Step 2. Keep it simmering.

After 5 minutes, you will get this amount of liquid, it's very sweet.

Remove the tuna from its oil and mix with the vinegar, honey, mustard and salt & pepper.

Allow Step 4 to cool then lightly squeeze to remove any liquid and add to Step 5. Add the tuna oil a bit at a time and mix well, then serve.

Tips & Note

It's a great recipe when you've bought some Chinese leaves and have some left over. You can reduce the amount of vinegar if it is too sour for your taste, or you could use mayonnaise instead.
