Salmon Salad With A Hot Oil Dressing

Goes well with lots of healthy vegetables.

Ingredients

Tinned red salmon (small) 1
Round or curly lettuce 1/2
Celery 1
Spring onions 4
Sesame oil 3 tbsp
Sauce:
Light soy sauce 2 tbsp
Vinegar 1 tbsp
Sugar 1/2 tsp

Method

Chop the spring onions diagonally and soak in water. Tear the lettuce into bitesize pieces. Remove the fibres from the celery.

Put the lettuce and celery into a bowl and place the drained and flaked salmon in the middle. Scatter the spring onions on top.

Mix all the sauce ingredients in a small bowl.

Heat the sesame oil in a small pan until it starts to smoke. Pour over the dish at Step 2. Pour the sauce from Step 3 over the top.

Mix well and transfer to a serving dish.

Tips & Note

●The sesame oil should be really really hot - it should sizzle when you pour it over the salad. If it's not hot enough, it will taste a bit oily
●Optionally, you could add cayenne pepper into the sauce
