Stuffed Onion

Ingredients

Onion (large) 4
Tinned tuna (in sunflower oil) 1
Bay leaves 8
Stock cube 1
Hot water 300ml
Sundried tomatoes 20g (4 slices)
Salt & pepper a little

Method

Chop off the bottom root side and top side of the onions to make them flat.

Peel the onions then remove the centre layers, keeping one large outer layer.

Finely slice the removed onion layers and mix with the chopped sundried tomatoes and drained tuna.

Season with salt & pepper.

Place 2 bay leaves at the bottom of each hollowed out onion to seal it, then stuff with Step 4.

Prick the onions with a skewer to hasten the cooking.

Place the stuffed onions in a deep pan and pour in hot water seasoned with the stock cube to cover 90%.

Put some grease proof paper over the top and cover with a lid. Simmer for 20 minutes.

Tips & Note

When you hollow out the onion, it's easier to use a thin sharp spoon like a measuring spoon.
