Steam Fried Aubergines

Ingredients

Aubergine (large) 1
Oil 2 tbsp
Garnishes (spring onion, ginger or bonito flakes) as you like

Method

Trim the aubergine ends and cut in half lengthways. Soak in water to get rid of any bitterness, then drain and pat dry.

Put the oil in a heavy pan on medium heat and put in the aubergine cut side down. Put the lid on and steam fry for 7-8 minutes.

Turn the aubergines over and turn the heat down to low. Put the lid back on and steam for 5 minutes. Turn the heat off and keep on residual heat for a further 5 minutes.

Transfer to a dish and serve with your favourite garnishes or sauces.

Tips & Note

Such a simple recipe to cut and steam fry the aubergines in a pan. Take care when turning them over that it doesn't splash.
