Roast Lamb with a Rocket Salad

I made this with some left over lamb from a dinner party, it's now a delicious salad!

Ingredients

Roast lamb as required
Rocket 1/2 pack
Tomato 1
Cucumber 1/2
Garlic 1 clove
White wine vinegar as required
Olive oil as required
Salt as required
Pepper as required
Mustard as required

Method

Slice the roast lamb, roughly chop the tomato and finely chop the garlic. Peel the cucumber, cut in half, then slice diagonally.

Put Step 1 and the rocket into a bowl.

Make a dressing: mix the vinegar and olive oil (1:1).

Pour the dressing onto Step 2 and mix well. Season with salt & pepper and transfer to a serving dish with mustard on the side.

Tips & Note

☆You can use French mustard instead of English for this dish
