Quick Anchovy and Cucumber Pickle

It doesn't take long for the cucumber to absorb the taste of anchovy.

Ingredients

Cucumber 1
Anchovy fillets 4
【Seasoning】
White wine vinegar 2 tbsp
Soy sauce 2 tbsp
Sugar 2 tbsp

Method

Peel off some of the cucumber skin and roughly chop.

Mix all the seasoning ingredients in a pan and heat on medium - this will reduce the acrid sharpness of the vinegar.

Put the roughly chopped anchovy into Step 2 together with the cucumber. Turn the heat off.

Tips & Note

The tastes are absorbed as it cools down, so it's better to leave in the fridge and will be more tasty the next day.
