Smoked Mackerel Salad

Ingredients

Smoked mackerel fillet 1
Cucumber 1/3
Tomatoes 2-3
Dressing:
White wine vinegar 2 tbsp
Sugar 1 tbsp
Sesame oil 1 tbsp
Soy sauce 1 tbsp
Mirin 1/2 tbsp
Salt & pepper as required

Method

Roughly chop the cucumber and sprinkle with some salt.

Chop the tomatoes into half or thirds. I recommend vine ripened tomatoes for good flavour.

Remove the skin and bones from the smoked mackerel. Tear into small pieces.

Mix all the dressing ingredients together in a large bowl and mix with the salad vegetables.

Just before serving, add the mackerel and lightly mix in. Sprinkle with sesame seeds if you like.
