Ingredients

Udon noodles for 1
Cabbage leaves (pointed) 3-4
Onion 1/2
Carrot 1/2
Spring onions 2
Pork loin fillet 120-150g
Water 100ml
Dashi stock granules 1 tbsp
Soy sauce 1.5 tbsp
Mirin 1.5 tbsp
Vegetable oil 1 tbsp
Bonito flakes (katsuo bushi) as you like
Green laver as you like

Method

Thinly slice the pork loin and season with some salt & pepper. Chop the vegetables to bitesize pieces.

Boil the udon noodles (dry or vacuum packed) then drain in a colander.

Put the oil into a frying pan and fry the pork on high heat. Gradually add the vegetables and fry together. Season lightly with some salt & pepper.

When the vegetables have softened, add the water, dashi stock granules, soy sauce and mirin and mix well. Cook to reduce the liquid on high heat until almost gone.

Sprinkle with the bonito flakes and green laver if you like.
