Healthy Carrot & Tomato Soup

A recipe taught to me by my mother-in-law, it really is delicious!

Ingredients

Carrots (large) 4
Onions (large) 2
Tinned tomatoes 2
Garlic 1 clove
Stock granules 2 tsp
Olive oil as required
Salt & pepper as required

Method

Here are the ingredients. Cut the carrots into flat strips.

Put the olive oil and garlic into a large pan on medium heat. Add the onions and fry until softened.

Add the carrots and fry until soft.

Pour in enough water to cover all the ingredients and add the stock granules. Bring to the boil, then turn down the heat and simmer for 10 minutes.

Add the tinned tomatoes and simmer for a further 15 minutes on medium heat. Turn the heat off and blend until smooth. Season to taste with salt & pepper.

Garnish with finely chopped parsley or coriander and serve.

Tips & Note

※It will blend to quite a thick soup at Step 5, so add a bit of water to reach your preferred consistency
※You can make lots of this soup and freeze in takeaway cartons
