Simmered Chinese Leaves & Sundried Tomatoes

You'll really taste the sweetness of the Chinese leaves in this dish.

Ingredients

Chinese leaves bunch 1/2
Sundried tomatoes in olive oil 2
Garlic 1 clove
White wine 1 tbsp
Olive oil (from the sundried tomatoes) 1 tbsp
Salt & pepper a little
Water 30ml

Method

Roughly chop the Chinese leaves and finely chop the sundried tomatoes and garlic.

Place the Chinese leaves in a pan and sprinkle over the sundried tomatoes and garlic. Pour in the wine, water and olive oil.

Put the lid on, bring to the boil and simmer for 7-8 minutes on low heat. Season with salt & pepper before serving.

Tips & Note

●Add more water if required to soften the Chinese leaves at Step 2
●Use the oil from the sundried tomatoes
●You can grate some cheese on the top for an extra twist
