Spicy Potato Salad with Edamame Beans

Ingredients

Potatoes 2 (300g)
Edamame beans (frozen) 80g
Mayonnaise 3 tbsp
Sweet chilli sauce 3 tbsp

Method

Dice the potatoes and put into a pan of boiling water.

When soft, add the frozen edamame beans. Drain when both are cooked completely.

Mix the mayonnaise and sweet chilli sauce in a bowl and put into a serving dish. Add Step 2 and mix well before serving.

This is the sweet chilli sauce I used.

Tips & Note

●Don't overboil the potato, the firm dice should have some texture. You could use broad beans instead of edamame beans.
●Delicious even when cold.
