Healthy Miso Soup with Potato & Mangetout

Adding the beaten egg makes this soup mild and very easy to eat.

Ingredients

Potatoes 120g
Mangetout 10-12
Dashi stock granules 2.5g (1/3 tbsp)
Egg 1
Miso (red or mixed) 40g
Hot water 600ml

Method

Peel the potatoes and cut to bitesize.

Boil the potatoes in hot water for 5 minutes then add the dashi granules. Reduce the liquid to about 400ml.

Add the miso through a strainer a bit at a time or dissolve in a ladle to prevent lumps. Turn the heat down to medium, it shouldn't boil otherwise the flavour will be lost.

Add the mangetout for 1 minute on medium heat.

Pour in the beaten egg in a circle and swirl once with a fork. Turn the heat off. Transfer to a miso bowl or mug or cup and enjoy!
