Healthy Miso Soup with Tofu & Wakame Seaweed

Ingredients

Water (soft) 400ml
Dashi stock granules 2.5g (1/3 tbsp)
Miso (red) 40g (3 level tbsp)
Wakame seaweed (dried) 3g
Tofu 1/4
Spring onion 1/2

Method

Rehydrate the wakame in hot water. It's amazing how much it expands! Drain and pat dry.

Bring the water to the boil then turn the heat down to medium. Add the dashi stock granules and the wakame seaweed. Add the miso through a strainer or dissolved in a ladle to prevent lumps.

Add the 1cm diced tofu and heat on medium for 1 minute. Transfer to a soup bowl and sprinkle with finely chopped spring onions before serving.

Tips & Note

I've seen miso that includes dashi, so if you buy this, you don't need dashi stock. 40g miso for 2 people is quite a basic guideline but you can adjust according to your taste with more or less miso or water.
Vegans should use a vegetable stock cube instead of dashi.
