Chunky Tomato in Mapo Sauce

A great spicy accompaniment to cooked rice.

Serves 2

Ingredients

Minced beef 100g
Sesame oil as required
Garlic 3 cloves
Ginger as required
Chillis 2
Sugar 1 tsp
Soy sauce 2 tbsp
Miso 2 tbsp
Chicken stock 40ml
Tomatoes (medium) 2
Spring onions as required
Potato starch or cornflour 1 tsp
Salt & pepper as required

Method

Put the sesame oil in a frying pan and fry the finely chopped garlic, chilli and ginger. When you can smell the garlic, add the minced beef and stir.

Add the sugar, soy sauce, miso and chicken stock. When it starts to boil, add the roughly chopped tomatoes.

Cook for 3-5 minutes. Sprinkle with chopped spring onions and add the potato starch mixed with a bit of water to make a thick gravy.

Tips & Note

●Don't overcook the tomatoes or they will disappear. Move fast when you add them!

Method
