Chinese Stir Fried Beef & Tomato

Ingredients

Beef steak 200g
Spring onions 2
Tomatoes (medium) 3
Ginger 1 thumb
Soy sauce 1 tsp
Vegetable oil 1 tbsp
Oyster sauce 1.5 tbsp
Sesame oil 1.5 tbsp
Soy sauce 1.5 tbsp
Water 150ml
Corn starch in a bit of water as required

Method

Shred the beef and put into a bowl and add 1 tsp soy sauce, 1 tbsp cornstarch and the vegetable oil and rub well.

Put 1 tbsp oil in a frying pan and add the finely chopped ginger. Fry for 30 seconds, then add the beef and fry for 3 minutes before removing to a plate.

Add 1 more tbsp of oil to the same frying pan and add the chopped spring onions and wedges of tomato and fry for 2 minutes.

Add the soy sauce, oyster sauce, sesame oil and water and put the lid on to steam for 2 minutes. Remove the lid and return the beef from Step 2 and mix with the sauce.

Add the corn starch in the bit of water to thicken the sauce before serving.
