Sichuan Style Spicy Beef and Pepper Stir Fry

Sweet hoisin sauce meets hot chilli bean sauce in a terrific dish.

Ingredients

Beef steak 200g
Soy sauce (for the marinade) 1 tsp
Vegetable oil (for the marinade) 1 tsp
Cornflour (for the marinade) 1 tbsp
Garlic 1 clove
Ginger 1 thumb
Shallot 1/2
Onion 1/2
Peppers (green and red) 1 each
Salt & pepper a pinch each
Sauce:
Sesame oil 1/2 tsp
Chinese chilli bean sauce (Toban-jan) 1 tbsp
Hoisin sauce 1 tbsp
Soy sauce 1 tsp
Cornflour 1 tsp
Beef stock 150ml

Method

Shred the beef into strips and rub with the soy sauce, cornflour and oil in a bowl. Mix the sauce ingredients together in a separate bowl. Slice the onion and peppers.

Put the oil in a frying pan and fry the finely chopped garlic, ginger and shallot for 30 seconds. Add the beef and fry for 3 to 4 minutes on high heat.

Add the onions and fry for 1 minute before adding the peppers. Lightly season with salt & pepper.

Add the sauce from Step 1 and mix well. Reduce to half the amount on high heat. Adjust to taste with salt & pepper if necessary, then transfer to a serving dish.
