Sichuan Beef

Follow my one piece of advice in the preparation of the beef to make the meat very tender.

Ingredients

Beef (such as tenderloin) 200g
Salt & pepper a little
Egg white 1
Sesame oil 1 tsp
Cornflour (or potato starch) 1 tbsp (or 1 tsp)
Oil 2 tbsp
Carrot 1
Celery 2
Onion 1/2
Green pepper 1/2
Mushrooms 3-4
Garlic 1 clove
Ginger 1 thumb
Rice wine (sake) 1 tbsp
Hot water 2 ladles
Oyster sauce 1 tbsp
Chinese chilli bean sauce (toban-jan) 1.5 tbsp
Sugar 1 tbsp
Soy sauce 1 tbsp
Cornflour in a little bit of water as required

Method

Put the thinly sliced beef, salt & pepper, egg white, sesame oil and cornflour in a bowl and thoroughly rub together. Keep aside for 10 minutes.

Cut the green pepper and onions into bitesize pieces. Thinly slice the carrot, celery and mushrooms so they cook quickly. Finley chop the garlic and ginger.

Put 1 tbsp oil in a frying pan and stir fry the beef on high heat until about 80% cooked, then remove to a plate.

In the same pan, add another tbsp oil and fry the ginger and garlic for 30 seconds. Add all the vegetables and fry for 3 minutes on high heat.

Add the rice wine and evaporate the alcohol, then add the water and reduce the sauce by half. Add the oyster sauce, chinese chilli bean sauce and sugar.

Return the beef from Step 3 and mix with sauce. Add the cornflour to thicken the sauce. Finally, add the soy sauce and mix well. Enjoy!
