Stir Fried Spicy Beef and Cabbage

Ingredients

Beef (any cut) 200g
Beef marinade:
Soy sauce 1 tsp
Salt & pepper as required
Sesame oil 1 tsp
Rice wine (sake) 1 tsp
Cornflour (or potato starch) 1 tbsp (or 1 tsp)
Onion 1/2
Pointed cabbage leaves 4-5
Oil 2 tbsp
Garlic 1 clove
Ginger 1 thumb
Rice wine (sake) 2 tbsp
Oyster sauce 1 tbsp
Chinese chilli bean sauce (toban-jan) 1 tbsp
Sugar 1 tsp
Soy sauce 1 tbsp
Sesame oil 1 tsp

Method

Cut the beef into bitesize pieces and add the marinade seasonings (from soy sauce to cornflour) and rub in, then keep for 10 minutes. Roughly chop the cabbage and thinly slice the onion.

Put 1 tbsp oil in a frying pan and add the beef from Step 1 and stir fry until nicely browned, then remove it to a plate.

Add another tbsp oil to the same frying pan and fry the finely chopped garlic and ginger for 30 seconds on high heat. Add the cabbage.

Add the rice wine and when the cabbage has softened, return the beef from Step 2 to the pan and add the oyster sauce, chilli bean sauce and sugar and mix well.

When the sauce is firmly mixed, drizzle in the soy sauce and sesame oil, lightly mix again and transfer to a serving dish.
