Stir Fried Beef with Spring Onions

A simple and delicious Chinese recipe, just marinate the beef and stir fry everything in one go.

Ingredients

Beef (rib eye stake) 250g
Spring onions 6-8
Marinade:
Salt & pepper a pinch each
Sugar 1 tsp
Oyster sauce 1 tbsp
Vegetable oil 1 tbsp
Cornflour (or potato starch) 1 tbsp
Vegetable oil as required
Rice wine 1.5 tbsp
Seasonings:
Soy sauce 2 tbsp
Sugar 1.5 tsp
Salt & pepper a pinch each
Sesame oil 1 tsp
Oyster sauce 1 tbsp

Method

Cut the beef thinly and rub with the marinade by hand. Mix all the seasonings in advance. Cut the spring onions diagonally.

Put 2 tbsp of oil in a wok or frying pan and heat on high. Stir fry the beef until it's 80% cooked, then remove to a plate.

Add 1 tbsp of oil in the same frying pan and stir fry the white parts of the spring onion for 1 minute, then return the beef fro Step 2 and fry together.

Add the rice wine and burn off the alcohol. Add all the seasonings and stir in. Add the green parts of the spring onion and fry together - it's done!

Tips & Note

Season to taste at Step 4, adding soy sauce or oyster sauce if necessary. If it's too thick, add a bit of water.
