Hot & Sweet Minced Pork with Tofu

It's much quicker and easier than mapo tofu but just as tasty.

Ingredients

Tofu 1
Vegetable oil 1 tbsp
Spring onions 5-6
Garlic 1 clove
Ginger 1 thumb
Minced pork 120-150g
Soy sauce 1.5 tbsp
Sugar 1 tbsp
Miso 1.5 tbsp
Chinese chilli bean sauce 1.5 tbsp
Chilli oil 1 tbsp
Chicken stock 300ml
Potato starch in water as required

Method

Boil the tofu in salted water for 3 minutes. Put the vegetable oil in a large frying pan on medium heat and add one finely chopped spring onion, finely chopped garlic and ginger.

Add the minced pork and fry until browned and separate. Add the miso, chilli bean sauce, sugar, soy sauce and chilli oil and fry until the seasonings are absorbed.

Add the chicken stock and bring to the boil then reduce. Add the potato starch in water to thicken the sauce. Add the tofu cut into bitesize pieces and reduce the sauce further.

Add the remaining coarsely chopped spring onions and cook for 4-5 minutes. You can drizzle extra chilli oil or some vinegar just before serving if you like.

Tips & Note

If you like it very hot, add more chilli bean sauce or chilli oil. I used firm tofu this time, but I think silky tofu would be better.
