Ingredients

Spaghetti 120g
Cod roe (mentaiko) 1
Butter 1 tsp
Soy sauce 1 tsp
Olive oil 2 tbsp
Double cream 1 tbsp
Parmigiano reggiano 30g
Parsley as required
Egg yolk 1

Method

Start cooking the pasta. Add 1-1.5% salt to the amount of water (10-15g salt in 1 litre water for example).

Keep some of the cheese aside then mix all the other ingredients together in a bowl.

Add 2-3 tbsp pasta water to the bowl with the cooked pasta and mix well for 1 minute.

Transfer to a serving dish and sprinkle with the remaining cheese before serving.

Tips & Note

●The egg yolk will cook in the heat of the pasta, so don't worry that it will be uncooked
